Hot Garlic Black Bean Burritos

1 large can black beans
5 fresh peeled garlic cloves
5 dried arbol chiles with seeds (no stems)
1 tablespoon salt
2 tablespoons olive oil
2 tablespoons adobo
1 packet saizon
3 cups of grated cheddar cheese
1 diced tomato
6 large tortillas
2 cups of sour cream or plain yogurt

Makes 6 servings

1. Mix adobo and saizon into black beans (including liquid).  Begin heating in a large pan on medium heat.

2. Put garlic cloves, peppers, olive oil, and salt in large mortar (I like Thai ones).  Crush with pestle to yield a smooth reddish paste.

3. Add garlic pepper paste to beans, stirring thoroughly.  Simmer on medium-low heat for 10-15 minutes.

4. Fill tortillas with beans, some cheese and some tomatoes.

5. Garnish with sour cream or yogurt and serve.


Hot Garlic Pasta

5 fresh peeled garlic cloves
5 dried arbol chiles with seeds (no stems)
1 tablespoon salt
5 tablespoons olive oil
2 cups plain marinara sauce from jar
1 lb. pasta
Parmesan cheese

Makes 4 servings

1. Boil pasta in large pot.

2. Heat marinara sauce (Colavita? They sponsor a bike team) in skillet on medium heat

2. Put garlic cloves, peppers, 2 tbs. olive oil, and salt in large mortar (I like Thai ones).  Crush with pestle to yield a smooth reddish paste.

3. Add garlic pepper paste to sauce stirring thoroughly.  Add 3 tablespoons olive oil to sauce. Simmer on medium-low heat for 10 minutes.

4. Drain pasta. Mix with sauce, coating pasta thoroughly.

5. Garnish with parmesan cheese to taste.
